Here’s a simple Kiwi cupcake recipe:
Ingredients:
For the cupcakes:
1 1/2 cups all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1 cup whole milk
2 large eggs
2 teaspoons vanilla extract
1 cup diced kiwi (about 2-3 kiwis)
For the kiwi buttercream frosting:
1 cup unsalted butter, softened
2 cups powdered sugar
2 teaspoons vanilla extract
2-3 tablespoons kiwi puree (from about 1 kiwi)
Instructions:
1. Preheat the oven to 350°F (180°C). Line a 12-cup muffin pan with cupcake liners.
2. In a medium bowl, whisk together flour, sugar, baking powder, and salt.
3. In a large bowl, using an electric mixer, beat the butter until creamy. Add milk and beat until combined.
4. Add eggs one at a time, beating well after each addition. Beat in vanilla extract.
5. Gradually add the dry ingredients to the wet ingredients, beating until just combined.
6. Fold in the diced Kiwi.
7. Divide the batter evenly among the cupcake liners.
8. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
9. Allow cupcakes to cool completely in the pan.
For the frosting:
1. Beat the softened butter until creamy.
2. Gradually add powdered sugar, beating until smooth and creamy.
3. Beat in vanilla extract and Kiwi puree until combined.
4. Adjust frosting consistency by adding more powdered sugar or Kiwi puree as needed.
