Ingredients:
2 cups fresh or dried apricot
1 cup water
1/4 cup sugar (optional)
1 tablespoon lemon juice (optional)
Instructions:
1. If using dried apricots, soak them in water for 30 minutes. Drain and rinse.
2. In a blender or juicer, puree the apricots until smooth.
3. Strain the mixture through a fine-mesh sieve or cheesecloth to remove pulp and fibers.
4. Add water and sugar (if using) to the apricot puree and stir until the sugar is dissolved.
5. Add lemon juice (if using) and stir to combine.
6. Chill the juice in the refrigerator for at least 30 minutes before serving.
